Spicy Maple Glaze

This sweet and spicy glaze i super easy to make and works beautifuly on light meats like pork and poultry.

1/4 cup pure maple syrup
3 Tbsp brown sugar
1 Tbsp butter
1/2 Tsp Sriracha hot sauce

In a small sauce pan, add the syrup, sugar, butter and hot sauce. Bring to a simmer, whisking briskly until sugar is disolved. Remove from heat.

Using a brush, apply a light glaze  about 10 minutes before removing from the grill.

Bacon Wrapped Shrimp Skewers

Ingredients:

1 pound of bacon cut into thirds, then partially cooked. Cook in the oven for about 6 minutes at 400.
1 pound peeled and deveined shrinp, tails on.
1 pound partially cooked bacon
5-6 jalepenos cored, seeded and sliced into strips
Jack or Colby Jack cheese cut into strips

Preparation:

Split the shrimp down the middle, insert a piece of cheese and a piece of jalepeno. Sprinkle with BBQ rub and wrap in bacon.

Garlic and Herb Smoked Turkey

Just because the weather is cooler doesn't mean you can't barbecue. Smoked turkey is a tasty alternative to the tired old oven roasted version. If you are ready to try something new, this garlic and herb rubbed smoked turkey is sure to please.

Prepare the brine

2 quarts water
2 quarts chicken broth
1 c. Kosher salt
1 c. brown sugar
2 tbs. Morton's Tender Quick
4 bay leaves
1/4 tsp. ground cloves
1/2 tsp. pickle spice
